Valencia gets skipped. Visitors go to Madrid for the museums and Barcelona for Gaudí, and leave out the city that invented paella altogether. Which is exactly what makes it good to walk — the old town is dense and flat, and for a Spanish city of this size it moves at a remarkably unhurried pace.
